- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups frozen peas
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
- Optional: 1/2 cup cream or coconut milk for creamier soup
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until softened.
- Add frozen peas and broth to the pot. Bring to a boil, then reduce heat and simmer for about 10-15 minutes, until peas are tender.
- Remove from heat and let cool slightly. Blend soup until smooth using an immersion blender or in batches using a regular blender.
- Return soup to the pot over low heat. Season with salt and pepper to taste. If using, stir in cream or coconut milk for added creaminess.
- Serve hot, garnished with a drizzle of cream or coconut milk, if desired.
