Ingredients:
- For the shortbread:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 tsp salt
- For the topping:
- 2 cups fresh peaches, peeled and sliced
- 2 tbsp honey
- 1 tbsp chopped fresh basil
- 1 tbsp sugar (for sprinkling)
- Prep the crust: Preheat your oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until light and fluffy. Gradually mix in the flour and salt until just combined. Press the dough evenly into the bottom of a greased 9x9-inch baking pan.
- Bake the crust: Bake the crust for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
- Add the topping: While the crust is cooling, toss the peach slices with honey and fresh basil. Arrange the peach slices evenly over the slightly cooled crust. Sprinkle with a little sugar.
- Bake and cool: Return to the oven and bake for an additional 20-25 minutes, or until the peaches are tender and the edges are golden brown. Let the bars cool completely before cutting into squares.
