Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups fresh peaches, peeled and chopped (about 2-3 medium peaches)
  • Optional: 1/2 cup chopped pecans or walnuts
For the Streusel Topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold and cubed
  • 1/4 teaspoon ground cinnamon
Instructions:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan, or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the chopped peaches and nuts (if using) until evenly distributed.
  7. Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
  8. To make the streusel topping, combine the flour, sugar, cold cubed butter, and ground cinnamon in a small bowl. Use your fingers or a pastry cutter to blend the ingredients until crumbly. Sprinkle the streusel evenly over the cake batter.
  9. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove from the oven and let the cake cool in the pan for 15 minutes. Then, transfer the cake to a wire rack to cool completely before slicing and serving.
This peach cake is wonderfully moist with bursts of juicy peach flavor in every bite, topped with a delightful cinnamon streusel. It's perfect for enjoying as a dessert or a sweet treat with coffee or tea!
