- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 cups fresh peaches, peeled and chopped (about 2-3 medium peaches)
- Optional: 1/2 cup chopped pecans or walnuts
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, cold and cubed
- 1/4 teaspoon ground cinnamon
- Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan, or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
- Gently fold in the chopped peaches and nuts (if using) until evenly distributed.
- Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
- To make the streusel topping, combine the flour, sugar, cold cubed butter, and ground cinnamon in a small bowl. Use your fingers or a pastry cutter to blend the ingredients until crumbly. Sprinkle the streusel evenly over the cake batter.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove from the oven and let the cake cool in the pan for 15 minutes. Then, transfer the cake to a wire rack to cool completely before slicing and serving.
