Thought I'd share one of my go-to Russian recipes with you all. Get ready to dive into the delicious world of Pelmeni dumplings. Simple, satisfying, and oh-so-delicious! Let's cook up some magic together!

- 2 cups all-purpose flour
- 2 large eggs
- 1/2 cup water
- 1 teaspoon salt
- 1/2 pound ground beef or pork
- 1 small onion, finely chopped
- Salt and pepper to taste
- Sour cream or vinegar for serving
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.
- In another bowl, mix together the ground meat, chopped onion, salt, and pepper.
- Roll out the dough on a floured surface until it's about 1/8 inch thick. Using a round cutter or glass, cut out circles of dough.
- Place a small spoonful of the meat mixture in the center of each circle. Fold the dough over the filling to create a half-moon shape, then pinch the edges to seal.
- Bring a large pot of salted water to a boil. Drop the pelmeni into the boiling water and cook for about 5-7 minutes, or until they float to the surface.
- Remove the pelmeni with a slotted spoon and serve hot, with sour cream or a splash of vinegar for dipping. Enjoy these delicious Russian dumplings as a comforting and satisfying meal!
