Perfect Roast Lamb
Ingredients:

  • 1 (2-lb.) boneless lamb shoulder roast, tied with butcher's twine
  • 4 cloves garlic, minced
  • 1 tbsp. freshly chopped rosemary
  • 2 tsp. fresh thyme leaves
  • 3 tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 2 lb. baby potatoes, halved if large

Directions:
  1. Preheat oven to 450ºF and position the oven rack in the lower third of the oven.
  2. In a small bowl, combine minced garlic, chopped rosemary, fresh thyme leaves, and 1 tablespoon of olive oil. Season generously with salt and pepper, then rub this mixture all over the lamb.
  3. In a 9"x13" baking dish, toss the baby potatoes with the remaining olive oil and season with additional salt and pepper.
  4. Place the lamb on top of the potatoes in the baking dish.
  5. Roast in the preheated oven until the internal temperature of the lamb reaches 145ºF, which should take about 1 hour.
  6. Let the lamb rest for 15 minutes, then remove the twine, slice the roast, and serve alongside the potatoes. Enjoy your perfect roast lamb!
