Perfect Sushi Rice Every Time

Hey sushi fans! 🍣 Who's ready to master the art of making sushi rice from scratch? No need for any fancy gadgets or gear ..this simple recipe is totally doable with just a few basic ingredients and some patience. Let's get that rice nice and sticky! 🍚


Ingredients:
  • 2 cups short-grain sushi rice (CalRose or Koshihikari varieties work great)
  • 2 1/4 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

Instructions:
  1. Start by rinsing the rice thoroughly. Place it in a mesh strainer and run cool water over it, gently tossing it around until the water runs clear. This helps remove any excess starch.
  2. Transfer the rinsed rice to a saucepan along with the 2 1/4 cups of water. Let it soak for 30 minutes.
  3. After soaking, place the saucepan over high heat and bring it to a boil. Once boiling, immediately reduce heat to low, cover with a lid, and simmer for 15 minutes. No peeking!
  4. After 15 minutes, remove the pan from the heat and let it steam for another 10 minutes, keeping the lid on the whole time.
  5. While the rice is steaming, make the seasoning mixture. In a small saucepan, combine the rice vinegar, sugar and salt. Heat and stir until the sugar fully dissolves. Set aside.
  6. Once the rice is done steaming, transfer it to a large non-metallic bowl or wooden tray. Use a spatula to spread it out and expose as much surface area as possible.
  7. Slowly drizzle the seasoning mixture over the hot rice while gently folding and tossing with the spatula. Fan the rice with a hand fan or shallow basket to cool it as you mix in the seasoning.
  8. Once cooled slightly, cover with a clean, damp kitchen towel and let the seasoned sushi rice rest for 30 minutes to an hour before using. This short resting time is key for developing its signature sticky texture.
