Made this vegetable stew last night, and it’s the ultimate comfort food! So hearty and packed with flavor.

Ingredients:- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened.
- Add carrots, potatoes, zucchini, and bell pepper. Cook for 5-7 minutes, stirring occasionally.
- Pour in diced tomatoes and vegetable broth. Add thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
- Garnish with fresh parsley and serve hot.
