Perfect Vegetable Stew Recipe

Made this vegetable stew last night, and it’s the ultimate comfort food! So hearty and packed with flavor.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened.
  2. Add carrots, potatoes, zucchini, and bell pepper. Cook for 5-7 minutes, stirring occasionally.
  3. Pour in diced tomatoes and vegetable broth. Add thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
  5. Garnish with fresh parsley and serve hot.
It’s cozy, filling, and makes great leftovers!

Hello! I think adding a splash of balsamic vinegar at the end really brings out the flavors though! 🥕🍅
