I recently tried making Persian Sabzi Polo, and it was a wonderful culinary adventure! This fragrant herb rice dish is a staple in Persian cuisine, often enjoyed during celebrations and special occasions. Sabzi Polo is typically served with fish or meat, featuring a beautiful blend of fresh herbs that brings vibrant flavors to the table. Here’s how you can prepare this delicious dish at home:

Ingredients:​

  • For the Rice:
    • 2 cups basmati rice
    • 4 cups water
    • 1 teaspoon salt
    • 2 tablespoons vegetable oil or butter
  • For the Herb Mixture:
    • 1 cup fresh parsley, chopped
    • 1 cup fresh cilantro, chopped
    • 1 cup fresh dill, chopped
    • 1/2 cup fresh chives or green onions, chopped
    • 1/2 teaspoon saffron threads (optional)
    • 1-2 tablespoons lemon juice (optional, for brightness)
    • Salt and pepper, to taste

Instructions:​

1. Prepare the Rice:​

  • Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak it in water for about 30 minutes, then drain.

2. Cook the Rice:​

  • In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice and 1 teaspoon of salt. Boil for about 5-7 minutes until the rice is slightly undercooked (it should still have a bite).
  • Drain the rice in a colander and rinse with cold water to stop the cooking process.

3. Prepare the Herb Mixture:​

  • In a large bowl, combine the chopped parsley, cilantro, dill, and chives or green onions. If using saffron, dissolve it in 2 tablespoons of hot water and add it to the herb mixture, along with lemon juice, salt, and pepper.

4. Layer and Steam:​

  • In the same pot, heat the vegetable oil or butter over medium heat. Layer half of the drained rice in the pot, followed by the herb mixture. Top with the remaining rice, creating a mound.
  • Use the back of a spoon to create several holes in the rice to allow steam to escape. Cover the pot with a clean kitchen towel and then place the lid on top. This will help create a fluffy texture.
  • Cook on low heat for about 30-40 minutes. If you prefer a crispy bottom, increase the heat for the last 5-10 minutes but watch carefully to avoid burning.

5. Serve:​

  • Once the rice is fully cooked and fluffy, gently fluff it with a fork and transfer it to a serving platter. Serve hot, preferably alongside grilled fish, meat, or as part of a festive meal.
