I recently tried making Peruvian Anticuchos, and they were absolutely amazing! These skewers are a popular street food in Peru, often made with marinated beef heart, but you can use other cuts of beef or even chicken if you prefer. The combination of the flavorful marinade, smoky char from grilling, and the perfect balance of spices makes these a real treat. Whether served with a side of potatoes or on their own, they’re packed with flavor. Here's how to make them:
Ingredients:
- For the Marinade:
- 1 lb (450g) beef heart (or beef sirloin, chicken, or pork)
- 3 tablespoons red wine vinegar
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon paprika (or Peruvian aji panca paste if available)
- 1 teaspoon cumin
- 1 teaspoon ground black pepper
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon soy sauce
- Salt, to taste
- For the Skewers:
- 1 large onion, cut into chunks
- 1-2 large potatoes, boiled and cut into chunks (optional, for serving)
- Fresh parsley (for garnish)
- Lime wedges (for serving)
- Wooden skewers (soaked in water for 30 minutes, if using)
Instructions:
1. Prepare the Meat:
- If using beef heart, clean and trim any excess fat. Cut the meat into bite-sized cubes. If using another cut of beef or chicken, simply cut into 1-inch pieces.
2. Make the Marinade:
- In a bowl, combine the red wine vinegar, vegetable oil, minced garlic, paprika, cumin, black pepper, oregano, cilantro, soy sauce, and salt. Stir well to combine.
- Add the meat to the marinade and toss to coat evenly. Cover and refrigerate for at least 2-4 hours, or preferably overnight, to allow the flavors to meld.
3. Assemble the Skewers:
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Alternate threading the marinated meat and onion chunks onto the skewers, leaving a little space between each piece.
4. Grill the Anticuchos:
- Preheat your grill or a grill pan to medium-high heat.
- Grill the skewers for about 4-5 minutes on each side, or until the meat is nicely charred on the outside and cooked to your desired level of doneness. If you’re using beef heart, it should still be tender but slightly pink inside.
5. Serve:
- Serve the Anticuchos hot, garnished with fresh parsley and lime wedges on the side. You can also serve them with boiled potatoes or a simple salad for a more filling meal.
