Pickled Cucumber

Ingredients:​

  • 2 medium cucumbers, thinly sliced
  • 1 cup water
  • 1 cup white vinegar
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 2 cloves garlic, smashed (optional)
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds
  • 1 bay leaf
  • Optional: red pepper flakes for heat, fresh dill for added flavor

Instructions:​

  1. In a small saucepan, combine water, vinegar, sugar, salt, garlic, peppercorns, mustard seeds, dill seeds, and bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat and let cool slightly.
  2. Place the thinly sliced cucumbers in a clean glass jar or container.
  3. Pour the warm pickling liquid over the cucumbers, making sure they are completely submerged.
  4. Optional: Add red pepper flakes or fresh dill to the jar for added flavor.
  5. Let the pickled cucumbers cool to room temperature, then cover the jar or container and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to develop.
  6. Enjoy your homemade pickled cucumbers as a tangy and refreshing snack, or as a tasty addition to sandwiches, salads, or charcuterie boards.

I’ve been trying out different ways to pickle cucumbers lately, and one thing I made recently was Chamoy pickles.
