Hey everyone! I just had to share this amazing pickled okra recipe I stumbled upon. It’s super easy to make and tastes incredible. Perfect for snacking or adding to your favorite dishes. Here’s how you do it:

- 1 pound fresh okra, washed and trimmed
- 4 cups white vinegar
- 4 cups water
- 1/4 cup kosher salt
- 1 tablespoon sugar
- 4 garlic cloves, peeled
- 2 teaspoons dill seeds
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 1 teaspoon red pepper flakes (optional, for a bit of heat)
- Fresh dill sprigs (for garnish)
- Start by sterilizing your jars and lids in boiling water. You’ll need about 4 pint-sized jars for this recipe.
- In a large pot, combine the vinegar, water, kosher salt, and sugar. Bring the mixture to a boil, stirring until the salt and sugar are dissolved.
- Divide the garlic cloves, dill seeds, mustard seeds, black peppercorns, and red pepper flakes (if using) evenly among the jars.
- Pack the okra into the jars, standing them upright and fitting them snugly.
- Pour the hot vinegar mixture over the okra, leaving about 1/2 inch of headspace at the top of each jar.
- Add a sprig of fresh dill to each jar for a nice touch.
- Wipe the rims of the jars, then seal with the lids and bands.
- Process the jars in a boiling water bath for about 10 minutes to ensure they’re properly sealed.
- Let the jars cool completely on a towel, then store them in a cool, dark place for at least a week to allow the flavors to develop.
