Hi everyone! I wanted to share my twist on a seafood boil, Filipino-style! It’s a fun, messy, and delicious dish perfect for get-togethers. We always serve it on a big table lined with banana leaves for that authentic feel. Here’s how I make it:
Ingredients:
- 1 kg shrimp (head-on, shell-on)
- 1 kg mussels or clams (cleaned)
- 2–3 medium crabs (optional but sooo worth it!)
- 4 large corn on the cob (cut into halves or thirds)
- 6–8 baby potatoes
- 4 pieces of longganisa or chorizo (cut into chunks)
- 2 heads of garlic (minced)
- 1 large onion (diced)
- 1/2 cup butter (or margarine)
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp banana ketchup (trust me on this!)
- 1 tsp sugar
- 1–2 tsp chili flakes (adjust to your spice level )
- Salt and pepper to taste
- Water or seafood broth for boiling
Steps:
- Prep and Boil: Boil the potatoes and corn in salted water until tender. Set aside. In the same pot, cook the mussels, shrimp, and crabs for a few minutes until just done. Save about a cup of the broth for later.
- Sauté the Good Stuff: In a big wok or pan, melt the butter. Sauté the garlic and onions until fragrant. Toss in the longganisa or chorizo chunks and cook until lightly browned.
- Flavor Bomb: Add soy sauce, oyster sauce, banana ketchup, sugar, chili flakes, and the saved broth. Let it simmer for 3–5 minutes. Taste-test and adjust seasonings.
- Mix It Up: Toss in the boiled seafood, corn, and potatoes. Gently stir to coat everything in that saucy goodness.
- Serve It Up: Lay it out on a table lined with banana leaves, and dig in with your hands for the ultimate experience!
