Ingredients:
- 1 pound dried pinto beans, rinsed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 jalapeño, chopped (optional)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 6 cups water or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh cilantro for garnish
- Soak the pinto beans overnight, then drain and rinse them.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- If using, add the chopped jalapeño and cook for another minute.
- Stir in the ground cumin, smoked paprika, chili powder, and dried oregano. Cook for about a minute until fragrant.
- Add the soaked pinto beans, water or vegetable broth, and the bay leaf.
- Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the beans are tender.
- Season with salt and pepper to taste.
- Remove the bay leaf and garnish with fresh cilantro before serving.
