  • 1 whole white fish (such as sea bass, snapper, or tilapia), cleaned and scaled
  • 2-3 stalks lemongrass, cut into pieces and bruised
  • 4-5 slices ginger
  • 4-5 kaffir lime leaves, torn

For the Sauce:​

  • 4-5 cloves garlic, finely chopped
  • 3-4 Thai bird's eye chilies, finely chopped (adjust to taste)
  • 1/4 cup lime juice (about 2-3 limes)
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1/4 cup chicken broth

For Garnish:​

  • Fresh cilantro leaves
  • Sliced green onions
  • Sliced lime

  1. Prepare the Fish:
    • Rinse the fish and pat it dry. Make 2-3 diagonal cuts on each side of the fish to help it cook evenly and absorb the flavors.
    • Stuff the cavity of the fish with lemongrass pieces, ginger slices, and torn kaffir lime leaves.
  2. Steam the Fish:
    • Place the prepared fish on a heatproof plate that fits inside your steamer.
    • Steam the fish over boiling water for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  3. Prepare the Sauce:
    • While the fish is steaming, in a small bowl, combine finely chopped garlic, chopped Thai bird's eye chilies, lime juice, fish sauce, palm sugar, and chicken broth. Stir until the sugar is dissolved and the sauce is well mixed.
  4. Serve:
    • Once the fish is cooked, carefully remove it from the steamer and transfer it to a serving platter.
    • Pour the prepared lime and chili sauce over the steamed fish.
  5. Garnish:
    • Garnish the fish with fresh cilantro leaves, sliced green onions, and additional lime slices.
