Indulge in the spicy and aromatic flavors of Pla Rad Prik Krapao, a delicious Thai dish featuring crispy fried fish topped with a flavorful chili and basil sauce!
**Ingredients**:
- 500g whole fish (such as snapper or tilapia), cleaned and scored
- 1/4 cup vegetable oil (for frying)
- 2 cloves garlic, minced
- 3-4 Thai red chilies, chopped
- 1 bell pepper, sliced
- 1/2 cup Thai basil leaves
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 1/4 cup water or chicken broth
- Fresh cilantro for garnish
**Instructions**:
1. Heat vegetable oil in a large pan or wok over medium-high heat.
2. Fry the whole fish until golden brown and crispy, about 5-7 minutes per side. Remove from the pan and set aside on a paper towel-lined plate to drain excess oil.
3. In the same pan, remove excess oil, leaving about 1 tablespoon. Add minced garlic and chopped Thai red chilies, stir-frying until fragrant.
4. Add bell pepper and stir-fry for another 1-2 minutes.
5. Pour in the soy sauce, fish sauce, oyster sauce, sugar, and water or chicken broth. Stir well and let the sauce simmer for 2-3 minutes.
6. Add the Thai basil leaves and stir until wilted.
7. Place the fried fish on a serving plate and pour the chili and basil sauce over the top.
