Try a healthy shrimp dish today

Ingredients:
- 1 pound (about 450g) large shrimp, peeled and deveined
- 4 cups water or seafood stock
- 1 lemon, sliced
- 2 cloves garlic, smashed
- 1 bay leaf
- Salt and pepper to taste
- Optional: herbs such as parsley, thyme, or dill
Instructions:
- Prepare the poaching liquid: In a large pot, combine the water or seafood stock with lemon slices, smashed garlic cloves, bay leaf, and any herbs you're using. Season the liquid with salt and pepper to taste.
- Bring the liquid to a simmer: Place the pot over medium heat and bring the poaching liquid to a gentle simmer. Let it simmer for about 5-10 minutes to allow the flavors to meld.
- Add the shrimp: Once the poaching liquid is simmering, carefully add the peeled and deveined shrimp to the pot. Make sure the shrimp are submerged in the liquid.
- Poach the shrimp: Let the shrimp cook in the poaching liquid for about 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook them, as shrimp can become rubbery if cooked too long.
- Remove the shrimp: Once the shrimp are cooked through, use a slotted spoon to remove them from the poaching liquid and transfer them to a plate or bowl.
- Serve and enjoy: Serve the poached shrimp warm or chilled, depending on your preference. They're delicious on their own as a light appetizer, or you can use them in salads, pasta dishes, or shrimp cocktails.
