Ingredients:
- 2 lbs pork shoulder, cut into 1-inch cubes
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 red bell peppers, chopped
- 2 green bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup chicken broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
- Fresh cilantro, chopped (for garnish)
- Shredded cheddar cheese (optional, for serving)
- Sour cream (optional, for serving)
- Prep the Pork: Season the pork cubes with salt and pepper.
- Sear the Pork: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork cubes in batches, searing until browned on all sides. Remove and set aside.
- Sauté Veggies: In the same pot, add a bit more olive oil if needed. Sauté the chopped onion until it’s translucent, then add the minced garlic and cook for another minute. Toss in the chopped bell peppers and cook until they start to soften, about 5 minutes.
- Combine Ingredients: Return the seared pork to the pot. Add the diced tomatoes, tomato sauce, and chicken broth. Stir in the kidney beans and black beans.
- Spice It Up: Add the chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if you like it spicy). Stir everything together. Add the brown sugar and apple cider vinegar, which give it a nice balance of flavors.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, stirring occasionally, until the pork is tender and the flavors have melded together.
- Serve: Ladle the chili into bowls and garnish with fresh cilantro. Add shredded cheddar cheese and a dollop of sour cream on top if you like.
