- 4 bone-in pork chops (1 1/2-inch thick)
- Kosher salt and black pepper
- 2 tablespoons extra-virgin olive oil
- 1 large clove garlic, crushed
- 1 teaspoon fennel seed
- 1 medium onion, chopped
- 1 teaspoon crushed red pepper flakes
- 2 sprigs fresh oregano, chopped (or 1 teaspoon dried oregano)
- 1/4 cup tomato paste
- 1 cup red wine
- 2 cups chicken stock
Instructions:
