Ingredients:
- 4 pork chops
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons chopped fresh parsley (optional, for garnish)
- Season the pork chops with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops to the skillet and sear for 3-4 minutes on each side until browned. Remove the pork chops from the skillet and set aside.
- In the same skillet, add the butter. Once melted, add the sliced mushrooms and cook for 5-7 minutes until they are browned and tender.
- Add the minced garlic to the skillet with the mushrooms and cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, dried thyme, and dried rosemary. Let the sauce simmer for 5-7 minutes until it thickens.
- Return the pork chops to the skillet and spoon some of the mushroom cream sauce over them. Let them simmer in the sauce for 5-7 minutes until they are cooked through.
- Once the pork chops are cooked through, remove them from the skillet and let them rest for a few minutes.
- Serve the pork chops with the mushroom cream sauce spooned over the top. Garnish with chopped fresh parsley if desired.
