- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small onion, diced
- 6 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh basil for garnish

Start by preheating your oven to 375Ā°F (190Ā°C). In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the sliced potatoes to the skillet and cook until theyāre tender and lightly golden, about 8-10 minutes. Stir occasionally to prevent sticking. Potato perfection!
- Toss in the diced onion and bell peppers, cooking until they soften, about 5 minutes. Season with salt, pepper, and oregano for that herby goodness.
