Hey everyone! I thought I'd share one of my favorite recipes. It's super easy to make and always hits the spot on a chilly day.

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- Salt and pepper to taste
- Optional toppings: shredded cheese, crispy bacon bits, chopped green onions
- In a large pot, sauté the chopped onion and minced garlic in a bit of olive oil until softened and fragrant.
- Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and let simmer until the potatoes are fork-tender, about 15-20 minutes.
- Once the potatoes are cooked through, use an immersion blender or transfer the soup to a blender to blend until smooth and creamy. Be careful when blending hot liquids!
- Stir in the milk or cream to your desired consistency. If the soup is too thick, you can add more broth or milk to thin it out.
- Season with salt and pepper to taste, and ladle the soup into bowls.
- Top each bowl with your favorite toppings like shredded cheese, crispy bacon bits, or chopped green onions.
