Potato Soup

Hey everyone! I thought I'd share one of my favorite recipes. It's super easy to make and always hits the spot on a chilly day.

Ingredients:
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, crispy bacon bits, chopped green onions
Instructions:
  1. In a large pot, sauté the chopped onion and minced garlic in a bit of olive oil until softened and fragrant.
  2. Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and let simmer until the potatoes are fork-tender, about 15-20 minutes.
  3. Once the potatoes are cooked through, use an immersion blender or transfer the soup to a blender to blend until smooth and creamy. Be careful when blending hot liquids!
  4. Stir in the milk or cream to your desired consistency. If the soup is too thick, you can add more broth or milk to thin it out.
  5. Season with salt and pepper to taste, and ladle the soup into bowls.
  6. Top each bowl with your favorite toppings like shredded cheese, crispy bacon bits, or chopped green onions.

I can almost taste the crispy bacon bits on top of that potato soup! What's else do you reccomment to top for this dish if I don't have bacon?
