Ingredients​

  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon salt
  • 1 1/4 cups (283.75 g) unsalted butter, (2 1/2 sticks), cold
  • 1/2 cup (118.29 ml) cold water

Instructions​

  • Combine the flour and salt in a large bowl by whisking them together.
  • Slice the cold butter into pieces about 1/4-inch thick and add them to the flour mixture, tossing until coated.
  • Add the cold water and stir until a thick dough forms.
  • Form the dough into a ball, flatten it into a disk shape, and wrap it in plastic wrap.
  • Refrigerate for 1 hour or freeze for 20 to 30 minutes.
  • Unwrap the chilled dough and dust your work surface with flour. Roll the dough into a rough rectangle.
  • Fold the dough into thirds, similar to folding a letter.
  • Rotate the dough 90 degrees, then roll and fold again.
  • Repeat the rolling and folding process 2 to 4 times in total.
  • Wrap the dough in plastic wrap again and refrigerate for 2 hours or overnight.
