I recently made these Pulled Jackfruit Tacos, and they were an absolute hit!

Ingredients:
- 1 can of young green jackfruit in brine
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/4 cup barbecue sauce
- Corn or flour tortillas
- Your favorite taco toppings (like avocado, cilantro, lime, etc.)
- Drain and rinse the jackfruit, then shred it with a fork or your hands to create that pulled texture.
- In a pan, sauté the diced onion until soft, then add the garlic and cook for another minute.
- Stir in the shredded jackfruit, smoked paprika, cumin, chili powder, and oregano. Cook for about 5 minutes to let the flavors blend.
- Add the barbecue sauce and a splash of water. Simmer on low heat for 10-15 minutes, stirring occasionally, until the jackfruit is tender and well-coated in the sauce.
- Warm up your tortillas, fill them with the pulled jackfruit, and top with your favorite taco fixings.
