Pumpkin Bread Recipe
Ingredients
Servings: 16 slices (makes 2 loaves)- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda, sifted
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp fine sea salt
- 3 large eggs, room temperature
- 1 cup extra light olive oil (or vegetable or corn oil)
- 15 oz pumpkin puree
Instructions
- Preheat and Prep:
- Preheat your oven to 350°F (175°C).
- Butter and lightly dust with flour two 8 1/2" x 4 1/2" bread pans.
- Mix Dry Ingredients:
- In a large mixing bowl, whisk together:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda (sifted)
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp fine sea salt
- In a large mixing bowl, whisk together:
- Mix Wet Ingredients:
- In a medium mixing bowl, whisk together:
- 3 large eggs (room temperature)
- 1 cup extra light olive oil (or vegetable or corn oil)
- 15 oz pumpkin puree
- In a medium mixing bowl, whisk together:
- Combine and Bake:
- Pour the wet ingredients into the dry ingredients.
- Whisk until smooth.
- Divide the batter evenly between the two prepared bread pans.
- Bake at 350°F for 45-55 minutes, or until a toothpick inserted into the center comes out clean (my oven took 50 minutes).
- Cool:
- Let the loaves cool in the pans for 10-15 minutes.
- Transfer to a wire rack to cool completely.
Notes
- Bake times can vary based on your oven and the color of your baking pan. Darker pans will bake faster, while lighter pans will take longer.
