This deliciously creamy mash combines the earthy sweetness of pumpkin with the subtle nuttiness of cauliflower, all jazzed up with a hint of garlic. It’s the perfect healthy, comforting dish to add to your dinner table. Great as a side or a light main, this recipe is bound to become a seasonal favorite. Let’s get mashing! 










Ingredients:
- 1 small pumpkin, peeled, seeded, and cut into chunks (about 2 cups)
- 1 medium head of cauliflower, cut into florets
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup heavy cream or milk (for a lighter version)
- 1/4 cup grated Parmesan cheese (optional, for extra richness)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prep the Veggies:Bring a large pot of salted water to a boil. Add the pumpkin chunks and cauliflower florets. Cook until both are tender, about 10-12 minutes. Drain well and set aside.
- Sauté the Garlic:In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it burn.
- Mash the Veggies:Return the drained pumpkin and cauliflower to the pot with the garlic. Use a potato masher or an immersion blender to mash the vegetables until smooth and well combined.
- Add Creaminess:Stir in the heavy cream or milk until the mash reaches your desired consistency. For extra richness, add the grated Parmesan cheese and stir until melted and well incorporated.
- Season and Serve:Season the mash with salt and pepper to taste. Transfer to a serving bowl and garnish with fresh chopped parsley.
