Pumpkin! My two teens chose a large pumpkin this year for Halloween. We carve it at the last minute, use a battery-operated candle in it and only for a few hours. I then wash and cook the entire pumpkin and freeze it. I have the equivalent of 7 large cans of pumpkin puree, ready to be baked into delicious desserts. I do the same every Fall and never buy canned pumpkin.
