  • 1 (15 oz) can pumpkin puree
  • ¾ cup melted butter
  • ¾ cup brown sugar
  • ¼ cup water
  • 2 eggs
  • 1 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • ½ cup white sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp baking powder
Directions:

  1. Preheat your oven to 350°F (175°C). Grease 14 muffin cups or line with paper liners and spray with cooking spray.
  2. Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, melted butter, brown sugar, water, eggs, and vanilla extract.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, white sugar, pumpkin pie spice, salt, baking soda, cinnamon, and baking powder.
  4. Mix Together: Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined.
  5. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about ¾ full.
  6. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the muffins are lightly browned on top and spring back when touched.

I have made this recipe 3 times and it is exactly like the texture above. The taste wasn’t as strong so I added more and yes, it still looks the same 🩷 thank you so much for this recipe. This has been my go to muffin recipe whenever I have extra pumpkin lying around.
