Ingredients:
- Cooking spray
- 1 (15 oz) can pumpkin puree
- ¾ cup melted butter
- ¾ cup brown sugar
- ¼ cup water
- 2 eggs
- 1 tsp vanilla extract
- 1¾ cups all-purpose flour
- ½ cup white sugar
- 2 tsp pumpkin pie spice
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp baking powder
- Preheat your oven to 350°F (175°C). Grease 14 muffin cups or line with paper liners and spray with cooking spray.
- Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, melted butter, brown sugar, water, eggs, and vanilla extract.
- Combine Dry Ingredients: In another bowl, whisk together the flour, white sugar, pumpkin pie spice, salt, baking soda, cinnamon, and baking powder.
- Mix Together: Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined.
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about ¾ full.
- Bake: Bake in the preheated oven for 25 to 30 minutes, or until the muffins are lightly browned on top and spring back when touched.
