Hey everyone! 🍂 I just made these Pumpkin Oatmeal Chocolate Chip Cookies and they’re absolutely delicious! 🎃🍪 The pumpkin adds a lovely fall flavor, and the chocolate chips just make everything better. Here’s how you can make them:

Ingredients:


  • 2 cups + 1 tbsp all-purpose flour (258g)
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • ½ tsp salt
  • 1 ½ cups old-fashioned rolled oats (128g)
  • 1 cup unsalted butter, melted and slightly cooled (226g)
  • 3 tbsp pure maple syrup (45ml)
  • ¾ cup packed light or dark brown sugar (150g)
  • ½ cup granulated sugar (100g)
  • 1 egg yolk
  • ¾ cup pumpkin puree (170g)
  • 2 tsp pure vanilla extract
  • 1 ½ cups semi-sweet chocolate chips (270g)
Instructions:

  1. Preheat your oven to 350°F (177°C) and line your baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, salt, and oats.
  3. In another bowl, mix the melted butter, maple syrup, brown sugar, granulated sugar, egg yolk, pumpkin puree, and vanilla extract until well combined. Then pour this into your dry ingredients and mix until everything comes together. Fold in the chocolate chips.
  4. Scoop about 1.5 tablespoons of dough per cookie onto the baking sheets, spacing them about 3 inches apart. Flatten them slightly and bake for 13-14 minutes, or until the edges are lightly browned. The centers will be soft.
  5. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. If you’re feeling extra, press a few more chocolate chips into the tops while they’re still warm. 😉
