**Ingredients:**
- 2 cups cooked rice (preferably day-old)
- 2 tbsp vegetable oil
- 1/2 cup diced onions
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 1/4 cup soy sauce
- 2 tbsp mirin (optional)
- 2 green onions, sliced
- 1 tbsp sesame seeds (optional)
- Salt and pepper to taste
**Instructions:**
1. Heat the oil in a large skillet or wok over medium-high heat.
2. Add the onions and carrots, and cook until softened, about 3-4 minutes.
3. Stir in the garlic and cook for another minute.
4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space, scrambling them until cooked through.
5. Add the rice, peas, soy sauce, and mirin to the skillet. Stir everything together and cook until heated through.
6. Season with salt and pepper to taste.
7. Garnish with green onions and sesame seeds if desired.
