- 1 box chocolate cake mix
- 1 egg
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 cup butter, softened
- 1 1/2 cups powdered sugar
- 2 tsp vanilla extract
Instructions:
- Pre-heat your oven to 350°F. Line a baking sheet with parchment paper.
- Make the whoopie batter by mixing the cake mix, egg, milk, and oil together in a bowl until just combined. No need to overwork it!
- Scoop rounds of batter (about 2 tbsp each) onto the prepared baking sheet, spacing them a couple inches apart. You want rounds, not perfect circles!
- Bake those cookie rounds for 8-10 minutes until they're set but still soft in the middle. Allow them to cool completely on the baking sheet.
- While the cookies cool, make the luscious filling by beating the softened butter until light and fluffy. Gradually mix in the powdered sugar and vanilla until thick and creamy.
- Once cooled, flip half the cookies flat-side up. Dollop or pipe the filling generously onto the flat sides.
- Top with the remaining cookies, flat-side down, to create your whoopie pie sandwiches.
- For best texture, refrigerate the finished whoopie pies for 30 minutes before devouring.
