  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough into six equal portions.
  6. Tint each portion with a different color of food coloring, kneading until the color is evenly distributed.
  7. Roll each colored dough into ropes of equal length.
  8. Twist the ropes together to create a colorful swirl pattern.
  9. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
  10. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  11. Slice the chilled dough into cookies, about 1/4 inch thick, and place them on the prepared baking sheets.
  12. Bake for 10-12 minutes, or until the edges are lightly golden.
