Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup fresh raspberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease or line an 8x8-inch baking dish.
  2. In a mixing bowl, combine 1 cup of flour, softened butter, and powdered sugar. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust. Bake in the preheated oven for 15-20 minutes, or until lightly golden brown.
  4. While the crust is baking, prepare the filling. In a separate mixing bowl, beat together the eggs, granulated sugar, 2 tablespoons of flour, lemon juice, and lemon zest until well combined.
  5. Gently fold in the fresh raspberries into the filling mixture.
  6. Once the crust is baked, pour the filling mixture over the hot crust.
  7. Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden brown.
  8. Allow the raspberry lemon bars to cool completely in the baking dish before slicing into squares.
  9. Optional: Dust with powdered sugar before serving for a decorative touch.
