Hey everyone! I wanted to share my favorite ratatouille recipe. It’s one of those dishes that’s hearty, healthy, and just feels so comforting. Perfect for when you’ve got a bunch of fresh veggies lying around! Let me know if you’ve tried something similar or if you have your own twist on it. 😊

Ingredients:

  • 1 large eggplant (cubed)
  • 2 zucchinis (sliced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 medium onion (chopped)
  • 3-4 garlic cloves (minced)
  • 4 medium tomatoes (diced, or a can of diced tomatoes works too!)
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • A handful of fresh basil (chopped, for garnish)
  • Salt and pepper to taste
Instructions:

  1. Start by heating 2 tbsp of olive oil in a large skillet or pot. Sauté the onions and garlic until fragrant and soft (about 2-3 minutes).
  2. Toss in the bell peppers and cook for another 5 minutes, stirring occasionally.
  3. Add the eggplant and zucchini, along with the remaining olive oil. Season with salt, pepper, thyme, and oregano. Cook until the veggies start to soften (around 10 minutes).
  4. Stir in the tomatoes and let everything simmer together for 15-20 minutes. The flavors will meld, and the veggies will get nice and tender.
  5. Taste and adjust seasoning if needed. Top with fresh basil just before serving.
Serving Suggestion:
I love serving this with crusty bread or over some creamy polenta. It’s also fantastic as a side dish with roasted chicken or fish!
