Hey everyone! I wanted to share my favorite ratatouille recipe. It’s one of those dishes that’s hearty, healthy, and just feels so comforting. Perfect for when you’ve got a bunch of fresh veggies lying around! Let me know if you’ve tried something similar or if you have your own twist on it.

I love serving this with crusty bread or over some creamy polenta. It’s also fantastic as a side dish with roasted chicken or fish!

Ingredients:
- 1 large eggplant (cubed)
- 2 zucchinis (sliced)
- 1 red bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 medium onion (chopped)
- 3-4 garlic cloves (minced)
- 4 medium tomatoes (diced, or a can of diced tomatoes works too!)
- 3 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- A handful of fresh basil (chopped, for garnish)
- Salt and pepper to taste
- Start by heating 2 tbsp of olive oil in a large skillet or pot. Sauté the onions and garlic until fragrant and soft (about 2-3 minutes).
- Toss in the bell peppers and cook for another 5 minutes, stirring occasionally.
- Add the eggplant and zucchini, along with the remaining olive oil. Season with salt, pepper, thyme, and oregano. Cook until the veggies start to soften (around 10 minutes).
- Stir in the tomatoes and let everything simmer together for 15-20 minutes. The flavors will meld, and the veggies will get nice and tender.
- Taste and adjust seasoning if needed. Top with fresh basil just before serving.
