- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 head of romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Croutons, for topping (optional)
- Caesar dressing, store-bought or homemade (see below)
- 1/4 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and olive oil.
- Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and have grill marks. Remove from the grill and let them rest for a few minutes before slicing.
- While the chicken is grilling, prepare the Caesar dressing. In a small bowl, whisk together the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Gradually whisk in the olive oil until the dressing is smooth and creamy.
- In a large bowl, toss the chopped romaine lettuce with the cherry tomatoes, grated Parmesan cheese, and croutons, if using.
- Slice the grilled chicken breasts and arrange them over the salad.
- Drizzle the Caesar dressing over the salad, tossing to coat evenly.
