Ingredients:
- 1 pound dried black beans, rinsed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 4 cups vegetable broth or water
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
- Set your Instant Pot to sauté mode. Add the olive oil.
- Once the oil is hot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the ground cumin, paprika, chili powder, and dried oregano. Stir for about a minute until fragrant.
- Add the rinsed black beans and vegetable broth or water.
- Secure the lid on the Instant Pot and set the valve to the sealing position.
- Cook on high pressure for 35 minutes.
- Allow the pressure to release naturally for 20 minutes, then carefully quick release any remaining pressure.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro or green onions before serving.
