Ingredients:
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: crumbled feta cheese or goat cheese for garnish
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced bell pepper, red onion, zucchini, and yellow squash. Drizzle with olive oil and season with salt and pepper. Toss until the vegetables are evenly coated.
- Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
- While the vegetables are roasting, prepare the balsamic glaze. In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat, then reduce the heat and let it simmer gently for 10-15 minutes, stirring occasionally, until the mixture has thickened to a syrupy consistency. Remove from heat and set aside to cool.
- Once the vegetables are done roasting, assemble the salad. Arrange the mixed salad greens on a serving platter or individual plates. Top with the roasted vegetables, cherry tomatoes, sliced strawberries, and blueberries.
- Drizzle the balsamic glaze over the salad just before serving.
- If desired, garnish with crumbled feta cheese or goat cheese for an extra burst of flavor.
