  • Pita bread or sandwich rolls
  • Hummus
  • Tzatziki sauce or tahini sauce
  • Fresh lettuce or spinach leaves
  • Sliced tomatoes
  • Sliced cucumbers
  • Sliced red onion
  • Optional: crumbled feta cheese, chopped olives, hot sauce
Instructions:
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a large bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, ground cumin, paprika, salt, and black pepper until evenly coated. Spread the vegetables in a single layer on the prepared baking sheet.
  3. Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through the cooking time. Remove from the oven and set aside.
  4. While the vegetables are roasting, prepare the baked falafel. In a food processor, combine the chickpeas, minced garlic, chopped parsley, chopped cilantro, tahini, lemon juice, ground cumin, ground coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined and slightly chunky.
  5. Shape the falafel mixture into small patties or balls and place them on a baking sheet lined with parchment paper.
  6. Bake the falafel in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through the baking time.
  7. To assemble the sandwiches, warm the pita bread or sandwich rolls in the oven or toaster. Spread a layer of hummus and tzatziki sauce or tahini sauce on each piece of bread.
  8. Place a few falafel patties on each sandwich, followed by roasted vegetables, fresh lettuce or spinach leaves, sliced tomatoes, cucumbers, and red onion. Add crumbled feta cheese, chopped olives, or hot sauce if desired.
  9. Serve the roasted vegetable baked falafel sandwiches immediately, with extra hummus or tzatziki sauce on the side for dipping, if desired.
