Romaine Salad with Crunchy Breadcrumbs and Creamy Dressing
Ingredients:
- 2 tablespoons unsalted butter
- 1 cup panko breadcrumbs
- Kosher salt and freshly ground black pepper
- 1/2 cup full-fat Greek yogurt
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- Zest of 1 lemon (about 1 teaspoon) plus 2 tablespoons juice
- 1 clove garlic, grated
- 1 head romaine lettuce, torn into pieces
- 1 cup shaved Parmesan
- In a medium skillet over medium heat, melt the butter. Add the panko breadcrumbs, 1/2 teaspoon salt, and a good amount of black pepper (about 20 grinds). Stir constantly until the breadcrumbs turn golden brown, around 5 minutes. Be attentive to prevent burning. Once golden, transfer to a plate to cool and set aside.
- In a small bowl, whisk together the Greek yogurt, Dijon mustard, Worcestershire sauce, lemon zest, lemon juice, garlic, 3 tablespoons of water, 1/2 teaspoon salt, and black pepper until smooth and creamy.
- Place the torn romaine lettuce in a serving bowl. Sprinkle in 3/4 cup of the toasted breadcrumbs and 3/4 cup of shaved Parmesan. Pour the dressing over the salad and toss until the lettuce is evenly coated.
- Sprinkle the remaining breadcrumbs and Parmesan on top of the salad and serve immediately.
