Ingredients:
For the Sausage:
- 1 kg ground pork (preferably with some fat)
- 1 cup pork fat, finely chopped (optional for extra juiciness)
- 1 cup fresh lemongrass, finely chopped
- 1/2 cup kaffir lime leaves, finely chopped
- 1/2 cup shallots, finely chopped
- 1/4 cup garlic, finely chopped
- 2 tablespoons galangal, finely chopped
- 2 tablespoons fresh turmeric, finely chopped or 1 tablespoon ground turmeric
- 3 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Natural pork sausage casings, soaked and rinsed
Instructions:
- Prepare the Sausage Mixture:
- In a large mixing bowl, combine the ground pork, pork fat (if using), lemongrass, kaffir lime leaves, shallots, garlic, galangal, and turmeric.
- Add the red curry paste, fish sauce, and sugar. Mix everything thoroughly until well combined. It’s best to use your hands to ensure all the ingredients are evenly distributed.
- Stuff the Sausages:
- Fit a sausage stuffer or a piping bag with a large nozzle and fill with the sausage mixture.
- Carefully stuff the sausage casings with the mixture, making sure not to overfill. Twist the sausages into 6-8 inch lengths.
- Tie the ends of the casings securely.
- Cook the Sausages:
- Preheat your grill or oven to medium-high heat.
- Grill the sausages over indirect heat, turning occasionally, until they are cooked through and nicely charred, about 20-30 minutes.
- Alternatively, you can bake them in the oven at 375°F (190°C) for about 30-40 minutes, turning halfway through.
- Serve:
- Slice the sausages and serve with sticky rice, fresh vegetables, and dipping sauces of your choice.
