For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- 1 lemon, sliced (for garnish)
- 1 ripe mango, peeled, pitted, and diced
- 1/2 red bell pepper, finely chopped
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced (optional, for heat)
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
- Prepare the Salsa:
- In a bowl, combine the diced mango, red bell pepper, red onion, jalapeño, and cilantro.
- Add lime juice and a pinch of salt. Mix well and set aside.
- Cook the Salmon:
- Preheat your oven to 400°F (200°C).
- Rub salmon fillets with olive oil, salt, pepper, and paprika if using.
- Place the fillets on a baking sheet lined with parchment paper or foil.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
