Salted Caramel Apple Pie
Ingredients:
For the Pie Crust:- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter (cold and cut into small pieces)
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1/4 cup ice water (more if needed)
- 6 cups apples (peeled, cored, and sliced, preferably a mix of tart and sweet apples like Granny Smith and Honeycrisp)
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tbsp lemon juice
- 1 cup granulated sugar
- 6 tbsp unsalted butter (cut into pieces)
- 1/2 cup heavy cream
- 1/2 tsp sea salt (plus more for sprinkling)
Instructions:
- Prepare the Pie Crust:
- In a large bowl, mix the flour, sugar, and salt.
- Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, stirring until the dough begins to come together. Add more water if necessary.
- Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Make the Apple Filling:
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss to coat the apples evenly.
- Prepare the Caramel Sauce:
- In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a golden brown color.
- Carefully add the butter (it will bubble vigorously), stirring until melted and smooth.
- Gradually stir in the heavy cream until combined. Remove from heat and stir in the sea salt. Let cool slightly.
- Assemble the Pie:
- Preheat your oven to 375°F (190°C).
- On a floured surface, roll out one of the dough discs to fit your pie dish. Place the dough in the dish, trimming any excess.
- Spread a layer of caramel sauce over the bottom of the pie crust.
- Pour the apple filling over the caramel layer.
- Roll out the second dough disc and place it over the filling. Trim, tuck, and crimp the edges to seal. Cut a few slits in the top crust for steam to escape.
- Brush the top crust with a little water and sprinkle with additional sea salt.
- Bake:
- Bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the pie cool for at least 2 hours before serving to allow the filling to set.
