- Heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it brown.
- Add the spinach leaves to the skillet. You may need to add them in batches depending on the size of your skillet. Toss gently with tongs or a spatula until the spinach begins to wilt.
- Continue cooking, tossing occasionally, until all the spinach is wilted and cooked down, about 2-3 minutes.
- Season with salt, pepper, and red pepper flakes if using. Taste and adjust seasoning as needed.
- Optional: Finish with a squeeze of lemon juice or a splash of balsamic vinegar for added brightness and flavor.
- Serve hot as a side dish or as a topping for pasta, rice, or grilled meats.
