- 1 onion, diced
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
- Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic to the pot and cook for another minute until fragrant.
- Season the pork shoulder chunks with salt and pepper, then add them to the pot. Cook until browned on all sides, about 5-7 minutes.
- Stir in the diced tomatoes, bell pepper, dried oregano, ground cumin, smoked paprika, and chili powder. Cook for another 3-4 minutes, allowing the spices to become fragrant.
- Pour in the chicken or vegetable broth, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
- Let the Asado De Puerco simmer gently for 1.5 to 2 hours, or until the pork is tender and falls apart easily.
