- 2 tbsp melted butter (plus extra for the pan)
- Pinch of salt
For the Filling:
- 1 cup (250 g) ricotta cheese
- 2 tbsp fresh dill, chopped (plus extra for garnish)
- 2 tbsp fresh chives, chopped
- Zest of 1 lemon
- Salt and pepper to taste
For the Topping:
- 8 oz (225 g) smoked salmon slices
- Lemon wedges for serving
- Mixed greens or arugula (optional)
Instructions:
1. Make the Crepes:
- In a mixing bowl, whisk together the flour and salt.
- In a separate bowl, beat the eggs and milk together. Gradually add the wet ingredients to the flour, whisking until smooth. Stir in the melted butter.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges lift slightly, then flip and cook for another 30 seconds. Repeat until all crepes are cooked.
2. Prepare the Filling:
- In a bowl, mix the ricotta, dill, chives, lemon zest, salt, and pepper until well combined.
3. Assemble the Crepes:
- Spread a thin layer of the ricotta mixture on one half of each crepe.
- Fold the crepes in half, then fold again into quarters to create a triangle shape.
4. Serve:
- Arrange the filled crepes on plates and top with slices of smoked salmon.
- Garnish with extra dill, a sprinkle of chives, and a squeeze of fresh lemon.
- Serve with mixed greens or arugula on the side, if desired.
Tips for Customization:
- Vegetarian Version: Swap smoked salmon with roasted vegetables like asparagus or cherry tomatoes.
- Cheese Swap: Use cream cheese or goat cheese instead of ricotta.
- Make-Ahead: Crepes can be made a day in advance and reheated gently in a skillet.
