- 4 large flour tortillas
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- Salsa and sour cream for serving
Directions:
- Hey, let's get cooking! Start by boiling the diced sweet potatoes in salted water for about 10-12 minutes, until tender. Drain and mash them in a bowl.
