Ingredients:​

  • 2 oz (60 ml) rye whiskey
  • 1 sugar cube
  • 3 dashes Peychaud's Bitters
  • Absinthe or Herbsaint
  • Lemon peel, for garnish

Instructions:​

  1. Start by chilling an Old Fashioned glass by placing it in the freezer or filling it with ice water.
  2. In another glass, muddle the sugar cube with the Peychaud's Bitters until the sugar is dissolved. You can also use simple syrup instead of a sugar cube if you prefer.
  3. Add the rye whiskey to the sugar and bitters mixture, along with some ice. Stir well until the mixture is thoroughly chilled.
  4. Discard the ice from the chilled Old Fashioned glass. Add a small amount of absinthe or Herbsaint to the glass, swirling it around to coat the interior. Discard any excess absinthe.
  5. Strain the whiskey mixture into the prepared glass.
  6. Express the oil from a lemon peel over the drink by twisting it over the surface, then garnish the cocktail with the lemon peel.
  7. Optionally, you can also rub the rim of the glass with the lemon peel for extra flavor.
  8. Serve and enjoy your classic Sazerac cocktail!
