I recently made Scottish Cranachan, and it was such a simple yet indulgent dessert! This traditional Scottish treat combines whipped cream, toasted oats, honey, raspberries, and whisky, creating a perfect balance of richness and freshness. It’s light, slightly boozy, and feels like a little celebration in a glass. 🥄🍓🏴

Ingredients:

  • ½ cup steel-cut oats
  • 1 cup heavy (double) cream
  • 2 tablespoons Scotch whisky
  • 2 tablespoons honey (preferably Scottish heather honey)
  • 1 ½ cups fresh raspberries
  • Extra honey or raspberries for garnish

Instructions:

1. Toast the Oats:
In a dry pan over medium heat, toast the oats until they turn golden and smell nutty (about 5 minutes). Let them cool.

2. Whip the Cream:
In a bowl, whisk the heavy cream until soft peaks form. Gently fold in the whisky and honey.

3. Layer the Cranachan:
In serving glasses, layer whipped cream, toasted oats, and raspberries, repeating until you reach the top.

4. Garnish & Serve:
Drizzle with extra honey and top with a few raspberries. Serve immediately for the best texture!

Conclusion:

Cranachan is simple, elegant, and bursting with flavor. The cream is silky, the oats add a nice crunch, and the whisky-honey combo ties it all together. It’s a must-try if you love easy yet impressive desserts! 🍯✨
