- 1 pound cooked shrimp, peeled and deveined
- 1 pound cooked crab meat (or imitation crab)
- 1 cup cooked bay scallops
- 1/2 cup celery, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Optional: a pinch of Old Bay seasoning
- Lettuce leaves, for serving
Instructions
- Prepare the Seafood
- If not already cooked, cook the shrimp, crab meat, and bay scallops. Allow them to cool completely.
- Chop and Combine Ingredients
- In a large bowl, combine the cooked shrimp, crab meat, and bay scallops.
- Add the chopped celery, red bell pepper, red onion, and fresh parsley. Gently mix everything together.
- Make the Dressing
- In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, pepper, and optional Old Bay seasoning until smooth.
- Mix the Salad
- Pour the dressing over the seafood mixture.
- Gently toss everything together until well coated.
- Chill
- Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
