Hey everyone! I just made this delicious Shakshuka for brunch and it turned out amazing. It's a Middle Eastern dish with eggs poached in a spicy tomato sauce, perfect for a flavorful weekend meal. Here's how I made it:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper, to taste
  • 4-6 large eggs
  • 1/4 cup chopped fresh cilantro or parsley, for garnish
  • Crumbled feta cheese, for serving (optional)
Instructions:
  1. Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
  2. Add the garlic, cumin, paprika, and chili powder. Cook for another minute, until fragrant.
  3. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes, until the sauce has slightly thickened.
  4. Using a spoon, create small wells in the sauce and crack an egg into each well. Season the eggs with salt and pepper.
  5. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  6. Sprinkle chopped cilantro or parsley over the top, and crumble feta cheese, if using.
  7. Serve the Shakshuka hot, straight from the skillet, with crusty bread or pita for dipping. Enjoy!
